Head Chef - Paul Brown
Paul Brown is from Lancashire and studied catering at Runshaw College in Leyland with his twin brother, Mike (now head chef at Daphne's). They both found their first kitchen positions in the famous Welsh restaurant, The Walnut Tree. Paul then made the move to London in 1998 and began working as a Chef de Partie at Le Caprice. In 2000 he left the group briefly to work for Anthony Demitri at the Michelin-starred Putney Bridge. After a year there, he went travelling in Australia and in 2001 returned to the group as a Senior Chef de Partie at Le Caprice.
By 2006, Paul had worked his way up to Head Chef and in 2009 he moved to the group’s sister company, The Birley Group as Head Chef at Mark’s Club. Paul is now set to take up the role of Head Chef at the group’s latest venture, 34.
